I sneaked 1 cup of zucchini into my morning oats (think zucchini bread) with a ripe banana to sweeten it naturally.
Zoats or zucchini oats
I try to eat at least 1 cup of vegetables at every meal (my goal is 5 cups a day). Lunch and dinner are usually pretty easy, but breakfast can be tricky. Naturally sweetened with ripe bananas and topped with blueberries and almonds. This zucchini oatmeal recipe can be made with so many toppings, including this cinnamon apple spice oatmeal, peanut butter oatmeal, pumpkin spice oatmeal, and more.
zucchini: Peel 7 ounces of zucchini and pulse in food processor. You can also shred zucchini with a box grater.
banana: Mash half a ripe banana.
White meat: You can buy liquid egg whites or separate the yolks and egg whites up to the third cup.
Oats: Use the third cup of quick oats.
milk: Make these zotes with your favorite milk, such as 2%, coconut, or almond milk.
cinnamon: Mix the cinnamon into the oats and sprinkle more on top.
topping: fresh blueberries, sliver almonds
How to make zucchini oats
mix Place the zucchini, banana, egg whites, oats, milk and cinnamon in a small saucepan and bring to a simmer.
stir oatmeal 3 to 5 minutes, until they are thoroughly cooked and creamy.
serve: Put oats in a bowl and top with blueberries, almonds and cinnamon.
variation:
fruits: Swap blueberries for raspberries, blackberries, strawberries, or a mix.
nuts: Top with walnuts or pecans, or omit if you have allergies.
spices: Sub cinnamon with pumpkin pie spice.
seed: Add chia seeds for extra protein and fiber.
