Chocolate Peppermint Caramel Cone (Vegan Friendly)
The classic, you lose the dairy but get more… chocolatey, crispy, salty and sweet. it has it all.
- 1 cup unpopped popcorn kernels Or 3 bags of plain microwave popcorn
- 1 box crispix cereal Family size – Cone check also works
- 3 candy cane finely ground
- 1 tablespoon flake salt
- 1/2 cup dairy-free white chocolate chips
- 1/2 cup diary free dark chocolate chips
- 1 cup vegan butter Myokos brand is my favorite
- 2 cup dark brown sugar
- 1 cup light corn syrup
- 1/4 cup cocoa powder
- 1 11.6 oz can sweetened condensed coconut milk
pop the popcorn
Using a popcorn popper or pot on the stove, pop the popcorn kernels in 1/2 cup batches, keeping them from burning. Transfer the popped kernels from one large bowl to another bowl, shaking occasionally to settle the unpopped kernels and separate the unpopped kernels. You don’t want unpopped kernels in the mix. Otherwise, someone could break a tooth.
In an extra-large metal or wooden mixing bowl, combine popcorn and crisps. Mix evenly.
In a medium-sized saucepan, melt the butter over medium-high heat. As soon as it melts, add the cocoa powder and mix with a whisk. Then add the corn syrup and brown sugar and whisk quickly until everything is combined.
The caramel will bubble. Do not touch it during this time. When the whole pot starts bubbling, set the timer to 2 minutes.
After 2 minutes, add the sweetened condensed coconut milk and mix gently. This caramel doesn’t behave like regular caramel, so don’t worry too much about crystallisation or grittiness, but still keep it light.
When it comes together, foam it again. When the whole pot starts bubbling, set the timer to 4 minutes.
make caramel cone
As soon as the 4 minutes are up, pour the caramel directly over the popcorn/crispics (make sure you’re using a heatproof bowl). back to Don’t make it too rough. Otherwise, all serials will be broken.
Add crushed candy canes and flake salt and stir again. Let stand for 10 minutes.
Add white chocolate chips and dark chocolate chips and mix until combined. Line the counter with foil and chill for at least 1 hour until the chocolate has set. If you use more than that, cover loosely with foil.
Serve in a bowl and enjoy!
