With the same soft texture and holiday flavor of our popular Starbucks recipe, these homemade vegan cranberry bliss bars are an absolute treat!

Starbucks Vegan Cranberry Bliss Bar
From frappuccinos to peppermint hot chocolate to cinnamon dolce latte to apple crisp oatmilk macchiato, Starbucks has plenty of vegan options.
However, one item not yet available as vegan at Starbucks is the famous cream cheese cranberry bliss bar.
Not wanting to miss out on the holiday fun, I came up with a vegan version of the coffee shop staple. is also not included.
Make these vegan chocolate chip cookies too

cream cheese frosting recipe
You can use your favorite vanilla or white frosting (many packaging brands are vegan by mistake!), or you can use the vegan frosting recipe below.
Beat 8 ounces of softened commercial cream cheese or homemade vegan cream cheese with 4 ounces of butter or plant-based butter, 2 cups of powdered sugar or powdered erythritol, and 1 teaspoon of pure vanilla extract.
If necessary, add your favorite milk such as almond milk or coconut milk to dilute.
This vegan cream cheese frosting recipe is more than enough for frosting bars. Try using leftover frosting in these vegan cinnamon rolls.

Vegan Cranberry Bliss Bar Ingredients
Festive cranberry Christmas bars recipe calls for dried cranberries, ginger powder, baking soda, salt, pure vanilla extract, almond flour, sweetener of choice, water, orange zest, and optional regular or mini white chocolate chips. .
Almond meal can be substituted for almond flour. Or, for a nut-free version, you can substitute dried cranberries and white chocolate chips for the dark chocolate chips to make my chickpea blondie.
I have not tried other flours for this recipe, such as coconut flour, white all-purpose flour, or gluten-free flour.
This recipe works with pure maple syrup, agave, honey (not vegan), or keto maple syrup. If you want to experiment with granulated sugar or other dry sweeteners at your own risk, be sure to report your results.

How to make vegan cranberry bars
Start by lining an 8-inch square of bread with parchment paper.
Preheat oven to 350 degrees Fahrenheit.
In a large mixing bowl, stir together the almond flour, ginger powder, salt, baking soda, and dried cranberries.
Add all remaining bar ingredients and stir to form a batter. We use gluten-free almond flour, so you don’t have to worry about overmixing.
Scoop batter into prepared 8-inch pan. Place a second sheet of parchment on top and mash with your hands until the batter evenly covers the entire bottom of the pan.
Bake on center rack of oven for 12 minutes, remove from oven and allow to cool completely before frosting.
Vegan Cranberry Bliss Bars can be left at room temperature when serving at a party or event. Bars can also be sliced and frozen. Please enjoy after thawing.

Keto Cranberry Bliss Bar
For a low-carb, sugar-free recipe, substitute keto maple syrup or your favorite keto liquid sweetener for pure maple syrup.
I think you could use powdered erythritol and replace the liquid with water, but I haven’t tried it yet so I can’t recommend it.
The recipe uses almond flour, so you don’t need to substitute flour. Do not try to substitute coconut flour as it will make the bar very dry and brittle.

Convert recipes to grams
If, like me, you prefer to bake on a food scale instead of weighing cups for accuracy and easy cleanup, use the following measurements.
360g almond flour, 45g water, 10g pure vanilla extract, 120g maple syrup, 60g white chocolate chips, 60g dried cranberries, and other ingredients not measured in grams.
One medium orange yields about 2 teaspoons of orange peel.
