Especially sour cream and grated cheese. When I updated the recipe to reduce carbs, I reduced the amount of beans. You can also make a delicious version of this turkey chili that’s even lower in carbs, just with fewer beans and a little more turkey. There’s a tip for that switch in the post.

How to make turkey chili with peppers, mushrooms and olives:

- In a soup pot or Dutch oven, heat 1 tablespoon of olive oil and sauté the chopped onion and pepper until just beginning to soften.
- Then garlic, chili powder, Grand ancho chili (affiliate link), Mexican oregano (affiliate link), cumin (affiliate link), and spike seasoning (affiliate link) Cook for a few more minutes.
- Add the mushrooms, chicken stock or broth, and diced cherry tomatoes and bring to a simmer.
- Heat 1 tablespoon of olive oil in a frying pan and fry the ground turkey until golden brown.
- Add the ground turkey to the pot with the pinto beans and diced green peppers and simmer the peppers over low heat for about 1 hour.
- (If using leftover turkey, add it around the same time as the olives.)
- Once the chili peppers are cooked and seasoned, drain the olives, cut in half lengthwise and add to the chili peppers.
- Simmer for at least 15 minutes. Add lime juice, stir, season with salt and freshly ground black pepper, and simmer for an additional 5 minutes.
- Serve the chili hot and add a squeeze of sour cream, grated cheese and fresh lime to the table if desired.

- In the soup pot or Dutch oven you use to make the chili, heat 1 tablespoon of olive oil and sauté the onion and red (or green) pepper until just beginning to soften.
- Then garlic, chili powder, Grand ancho chili (affiliate link), Mexican oregano (affiliate link), cumin (affiliate link), and spike seasoning (affiliate link) Cook for a few more minutes.
- Add mushrooms, chicken stock or canned chicken broth, and diced cherry tomatoes to start simmering.
- Heat another tablespoon of olive oil in a large skillet and cook the ground turkey until it is nicely browned and the moisture has evaporated.
- Add the ground turkey to the pan along with the pinto beans (rinsed or unrinsed), add the diced green chilies to the pan, and simmer the chilies over low heat for about 1 hour (if you have time). may be more if necessary).
- When the peppers are well cooked and the flavors are perfectly mixed, drain the olives, cut them in half lengthwise, and add them to the peppers.
- Simmer for at least 15 minutes. Add lime juice, stir, season with salt and freshly ground black pepper, and simmer for an additional 5 minutes.
- Serve the chili hot and add a squeeze of sour cream, grated cheese and fresh lime to the table if desired.
Note
Red paprika, green paprika, whatever you like. If you have homemade chicken stock, I would definitely use it in this recipe, but 14.5 oz he uses two. Canned chicken soup is also OK.
If not, add chili powder Grand ancho chili (affiliate link). If you don’t want it really spicy, use Anaheim green chili instead of jalapeños in this recipe. I used freshly frozen lime juice.
