sweet potato turkey meatloaf
My classic turkey meatloaf recipe is repeated in my house, but I love to tinker with it. But I love how it turned out. The binder is baked potato, which is rich in fiber, vitamins and minerals, and is topped with ketchup glaze. Get more ground turkey recipes here!
Can I add potatoes to my meatloaf?
The answer is yes. Works well as a binder in place of bread crumbs and oats.
What is the secret of moist meatloaf?
Here are some tips for moist turkey meatloaf.
Choose ingredients wisely: Sweet potatoes, eggs and ketchup moisten the turkey.
Do not overmix: If you don’t overdo the ingredients and mix them properly, you’ll end up with a firm meatloaf.
Do not over bake: Meatloaf should be ready in about 55 minutes, but check with a meat thermometer before doing so. All ovens bake differently, so yours may be ready sooner.
turkey meatloaf ingredients
Large sweet potato: This easy turkey meatloaf recipe is a great way to use leftover baked or air-fried sweet potatoes. If you don’t have any leftovers, the easiest way is to cook them in the microwave. To heat in the microwave, poke the potatoes a few times with a fork and wrap in a paper towel. Microwave 4 to 6 minutes, or until soft to the touch, more time if needed.
ketchup: Most of the ketchup goes into the meatloaf and the rest on top. If you don’t like ketchup, BBQ sauce is also delicious. To reduce sugar and lower calories, I often use unsweetened ketchup.
Worcestershire: Mix the sauce and ketchup to make a glaze.
Ground Turkey: Our moist meatloaf is made with 93% lean turkey and 99% dry.
egg: If you can’t eat eggs, omit them. I tested this both ways. It’s a little denser, but that’s perfectly fine.
Onion flakes: If you don’t have dried onion flakes, sauté 1/4 cup chopped onion.
marjoram: Replace the marjoram with your favorite spice.
salt: Use a teaspoon of salt here. Use Diamond Crystal Kosher Salt, which has less sodium than Morton salt or table salt. Adjust if using other salt.
How to make:
sweet potato: If you don’t have any leftover potatoes, just microwave them. Peel and mash the flesh in a large bowl.
mix With a fork, combine 2 tablespoons ketchup and all meatloaf ingredients except Worcestershire.
glaze: Mix remaining ketchup and Worcestershire sauce and brush over meatloaf.
bake 55 minute exposure at 350F. Let sit for 5 minutes before slicing.
variation:
Use minced or minced meat instead of ground turkey.
For a kid-friendly twist, add cheddar cheese to the mix if you like cheese.
For extra flavor, sauté 1 small onion, add 1 clove of garlic and 1 tablespoon of tomato paste, then add to the mix.
How to freeze meatloaf
Leftover turkey meatloaf can be stored in the refrigerator for 3 to 4 days and in the freezer for 3 months. Store in a freezer-safe container or wrap in foil. One serving can be thawed overnight in the refrigerator and then microwaved when ready to eat.
Side dish that goes well with this
Serve with cauliflower mashed potatoes and broccoli for dinner ideas. Brussel sprout salad, rice, or spinach would also be nice.
