This healthy breakfast is not only high in fibre, it’s also delicious. Steel cut oats are processed in less quantity than traditional quick-cooking oats, so they contain the highest amount of fiber and protein. Plus, one of my favorite ways to boost protein content is by adding egg whites. Win, win!

Place oats, water, maple syrup and cinnamon in a cooking pot and add fruit.
Cover the slow cooker and simmer over low heat for 2 hours.
Top the oatmeal with chopped nuts and add syrup if desired.

Slow cooker oatmeal is great for meal prep. Can be stored in the refrigerator for up to 6 days. To reheat, add a little milk or water and heat in the microwave or stovetop until warm.

Berries: I used a mix of berries, but like all blueberries and strawberries, you can stick to one if you prefer.
fruits: Use raisins or apples instead of fruit.
sweetener: Substitute honey for maple syrup.
topping: Top the oatmeal with fresh berries, sliced bananas, a drizzle of peanut butter, or a spoonful of chia seeds.
