A few years ago, when my brother Rand happened to be in Utah for my father’s 85th birthday party, I made a double lentil, sausage, brown rice, and spinach soup in my slow cooker. Sometimes I always like to try my culinary experiments and loved the soup so much that when I got home I asked if I could get the recipe before posting it on my blog. I think the version he still enjoys making.
Now I adapted that old soup recipe to this new one. Also, since I made this a stovetop soup, I used more chicken broth than the original soup and these changes reduced the carbs to 7 net carbs per serving!
This is a relatively long-cooking soup for a stovetop recipe, but I recommend simmering the soup over low heat so the house smells good! I love making soup in a crockpot! If so, you can also adapt this new low-carb recipe to make it in your slow cooker using the original slow cooker instructions linked above.

Some turkey and chicken sausages have sugar, so be careful if you don’t want the extra carbs.
What if you don’t have balsamic vinegar?
If you don’t have balsamic vinegar, you can use red wine vinegar instead. If you want to use a lot, you may use a little less while tasting.
How could this soup be even lower in carbs?
If you want an even lower-carb version of the soup, switch carrots for celery, lentils for another cauliflower rice, and balsamic vinegar for red wine vinegar.
How to make sausage lentil soup:

- I used Jenni-O Hardwood Smoked Turkey Sausage. slice thinly.
- Chop the onions, carrots and celery,
- Heat the olive oil in a large thick soup pot over medium heat and sauté the vegetables for about 2 minutes. Add garlic and dry spices and simmer for a few more minutes.
- Add sausage and cook for about 3 more minutes.
- Weigh the lentils and add to the pot along with the canned tomatoes, and season with juice, chicken broth, salt and freshly ground black pepper.
- Cook it over low heat for about an hour or until the lentils are tender.
- Then add the cauliflower rice and simmer for 30 minutes.
- Chop the spinach as desired. Baby spinach doesn’t need to be chopped too much.
- Add spinach and simmer for an additional 20-30 minutes.
- Next, stir in 2T of balsamic vinegar and cook for about 5 more minutes until hot.
- Sprinkle with parmesan cheese if you like, and it’s especially delicious.

procedure
- Cut sausages into strips about 1/4 to 1/2 inch wide.
- Chop the onions, carrots and celery into small pieces.
- Heat the olive oil in a thick soup pot, add the vegetables, and sauté until they begin to soften, about 2 minutes.
- Add garlic, thyme, and spike seasoning and simmer for about 2 minutes.
- Then add sausage and cook for about 3 more minutes.
- Add lentils, canned tomatoes, chicken broth, and salt and pepper to the soup pot to taste.
- Simmer over low heat until lentils are tender, about 1 hour.
- Add frozen cauliflower rice and simmer for an additional 30 minutes.
- Chop the spinach if desired, add to the soup pot and simmer for an additional 20-30 minutes.
- Add balsamic vinegar, mix and simmer for 5 minutes.
- Serve warm with parmesan cheese if desired.
Note
Soup is best with homemade chicken broth.
