Olive oil roasted salmon is easy to make and flavorful, and this delicious salmon is served with an optional tzatziki sauce. Loved this with a Middle Eastern spice called sumac, but if you don’t have paprika in your spice collection, use paprika!

Greater salmon for dinner:

  • 2 pieces skinless salmon, about 6 oz.each

  • About 2 teaspoons. Olive oil, plus an addition to grease the pan (use extra virgin olive oil for best flavor)

  • About 2 teaspoons. Szeged fish rub (see note)

  • About 1T sumac (see note)

procedure

  1. Remove salmon from refrigerator and allow to come to room temperature.
  2. Preheat oven to 450F/230C.
  3. Coat a large ovenproof skillet liberally with olive oil. (A thick cast iron pan is best.)
  4. Once the fish is at room temperature, place the pot in the oven and heat for 5 minutes.
  5. Rub both sides of the salmon with olive oil and generously Szeged fish love (affiliate link) and sumac (or whatever seasoning you have). Rub some of the spice with your fingers to help it stick to the salmon.
  6. After heating for 5 minutes, place the salmon face down in the frying pan and bake for 5 minutes.
  7. Carefully flip over and roast for about 3 more minutes, depending on salmon thickness.
  8. Serve hot with tzatziki sauce if desired.

Note

This recipe makes two servings, but can easily be doubled.

I love Szeged fish love (Affiliate link) However, you can use any seasoning that goes well with fish.
