Red cabbage is definitely a challenge for me to photograph, but I am happy with the updated photos. But if you like those ingredients, this interesting salad of slightly wilted red cabbage, bacon and goat cheese will make you make it again and again!

When I first started making this salad, I used 6 slices of bacon, but over the years I’ve used a little more bacon and goat cheese, so I changed the recipe. Of course, you can make it any way you prefer, using more or less bacon or goat cheese.

How to make red cabbage salad with bacon and goat cheese:

  1. Cut the bacon and fry in a large skillet until crisp.
  2. Slice the green onions while the bacon is cooking.
  3. When the bacon is crispy, remove it from the pan and discard the fat. (If you prefer, you can substitute bacon fat for the olive oil in the dressing.)
  4. Chop the cabbage into bite-sized pieces. (The photo shows an 8-cup large glass measuring cup, so it’s about 10 cups of shredded cabbage.)
  5. Add olive oil (or bacon grease), red wine vinegar, and garlic powder to a frying pan, mix, and stir-fry the dressing over medium-high heat for about 15 seconds.
  6. Add the cabbage and cook, stirring often, for about 3 minutes or until the cabbage begins to wilt but is still slightly crisp.
  7. Place the softened cabbage in a bowl and season with salt and freshly ground black pepper.
  8. When the cabbage is slightly cooled, stir-fry the green onions.
  9. Remove the goat cheese from the refrigerator and crumble immediately.
  10. Mix the bacon into the cabbage, then add the crumbled goat cheese.
  11. Serve with salad and enjoy!
  12. This salad can be warmed up a little in the microwave, but it tastes great after it’s been in the fridge.

  2. Slice the green onions while the bacon is cooking.

  4. Cut the cabbage into quarters and remove the core. Cut the cabbage into bite-sized pieces.
  5. Add olive oil (or bacon grease), red wine vinegar, and garlic powder to a frying pan over medium heat and sauté the dressing for about 15 seconds.
  6. Add cabbage all at once and cook for about 3 minutes or until cabbage begins to wilt but is still slightly crisp. Stir frequently so cabbage is coated with dressing.
  7. Place the softened cabbage in a large bowl and season with salt and freshly ground black pepper.
  8. Let cabbage cool for at least 5 minutes. When the cabbage is slightly cooled, stir-fry the green onions.
  9. Next, take the goat cheese out of the refrigerator and crumble it immediately.
  10. Mix the bacon into the cabbage and gently stir in the crushed boat cheese.
  11. Serve with salad and enjoy!
  12. This salad may need to be warmed up a bit in the microwave, but it tastes amazing in the fridge.

Note

10 cups of cabbage is one medium to large head of cabbage.

Without removing the goat cheese from the refrigerator, crumble the cabbage until tender and cool in a bowl.
