Pork chop with balsamic sauce A recipe I first found in a Gourmet magazine (no longer published) many years ago, and when I first posted this I had been reading the magazine for years and have made almost nothing since then. I confess I don’t. Most Gourmet recipes seemed a little too much to me, but this one was a total keeper.
Of course, I modified it a bit from what I found in a magazine to make it less carb and a little easier to make.If you like these ingredients, make it again and again.
I couldn’t resist omitting the shallots, which I thought most people wouldn’t have on hand, and seasoning the pork chops a bit. Penzey’s Pork Chop Seasoning (affiliate link) but if you don’t have it, I’d be great without it.
I replaced the sugar called for in the original recipe with monk fruit sweetener. Because of that change, this recipe has only 8 carbs per serving. If you want to limit sugar in your diet even more strictly, I think you’ll be fine with a little less balsamic vinegar.

What if there is no pork chop seasoning?
of Penzey’s Pork Chop Seasoning (affiliate link) I used salt, hickory smoke, garlic, onion, white pepper and ginger. I’m a big fan of that blend for use in pork chops, but if you don’t have it and don’t want to buy it, use a little bit of the spice you have.

This recipe doesn’t require you to use expensive aged balsamic vinegar, but choose one with good flavor.

How to make pork chops with balsamic glaze:

- Cut off the pork chops and season them Penzey’s Pork Chop Seasoning (affiliate link), salt and pepper.
- Heat olive oil (preferably a cast iron pan) and sear the pork chops well on both sides.
- Mix the vinegar with monk fruit sweetener or your favorite sweetener, add to the pan and simmer until slightly thickened.
- Then add the pork chops and cook over medium-low heat until the pork chops are cooked and the sauce is coated.
- Serve hot and wait for the compliments!

For a great low-carb dinner, these balsamic pork chops are delicious served with roasted turnips, roasted asparagus and peppers, or cauliflower rice with basil, parmesan and pine nuts.
A tastier dinner with pork:

4 center cut pork chops, trimmed of fat

1 tsp Penzeys pork chop seasoning (see note)

2/3 cup balsamic vinegar

2 tsp sweetener of your choice (see note)
procedure
- Remove fat from pork chops.
- on both sides of the chop Vegetarian (affiliate link) or salt, pepper, and Penzey’s Pork Chop Seasoning (Affiliate link) when using.
- Heat a frying pan for 1 minute, add the olive oil and heat for an additional 1 minute, add the pork chops and cook over medium heat until browned on both sides, about 5 minutes.
- Remove the pork chops to a plate, reduce the heat slightly, add the vinegar and sweetener, and cook until slightly thickened, about 2 minutes.
- Return the pork chops to the pan, add the liquid that has accumulated in the plate, and cook over medium-low heat for about 4 minutes, to coat the pork chops with the sauce.
- Serve hot with the sauce.

Low Carb / Low Glycemic / South Beach Diet Suggestions:
Even with the small amount of sugar in the balsamic vinegar, we think these balsamic pork chops are a good fit for the original South Beach diet or any low-carb diet. It sticks to meat. If you want to cut down on carbs/sugar, use an approved sweetener and add a little less balsamic vinegar.
