No-Noodle Lasagna with Sausage and Basil (Video)

Our low carb, keto no noodle lasagna with sausage and basil was inspired by an array of items we found at the grocery store, and it tasted so good! A comfort food dinner!

It’s no secret that I love low-carb casseroles because of how I make leftovers for the freezer.Since casseroles are some of the most popular recipes on this site, others must agree. But I also love casseroles when I need some comfort food in my life. Sausage and Basil Noodle Lasagna Cheesy, cozy and absolutely delicious.

And it’s definitely comfort food weather, so my favorite picks for this Friday remind me of this delicious low-carb lasagna recipe. It was three fun things. After a few iterations, the final version tasted great.

When the idea to make noodle lasagna hit my head, I might not have done it right away, except the next time I went to the grocery store where I found Laotian tomato basil sauce (affiliate link) It had half the carbs of the low-sugar sauce I was using. And on that same shopping trip, I discovered the store had fresh basil plants! and added flavor to the sauce for this low carb lasagna!

If your store doesn’t carry Laos, pick the lowest carb source you can find. None of the companies know I’m covering them.)

What if you don’t have fresh basil?

If you don’t have fresh basil, a tube of dried or chopped basil can be used in the sauce.

Steps to make this low carb lasagna recipe:

  1. Preheat the oven and spray a casserole dish with nonstick spray.

  7. I used a wonderful Le Creuset baking dish purchased at Williams Sonoma along with a generous gift certificate I received from my brother Dave and wife Amy. Cut the folio in half to cover the bottom of the dish. (For a dish my size, he only needed two folios per layer. If your dish is a little wider or longer, you may need three.)
  8. Spread half of the meat sauce over the folio.
  9. Then layer with half the cottage cheese mixture and half the mozzarella.
  10. Separate layers of folio, meat sauce, cottage cheese mix, and mozzarella. Sprinkle grated Parmesan cheese on top.
  11. Bake low carb no noodle lasagna with sausage and basil for 40-45 minutes. (The lasagna in the photo was baked for 45 minutes, but start baking after 35-40 minutes.)
  12. Enjoy it hot! This freezes well and reheats beautifully in the microwave or oven.

  • Olive oil 1T

  • 1 medium onion, finely chopped

  • 1 pound lean ground beef

  • 1 19.5 oz. package. Hot Turkey Italian Sausage (see note)

  • 1 jar (24 ounces) low-sugar pasta sauce (see note)

  • 1/2 cup chopped fresh basil (If you don’t have fresh basil, use a few teaspoons of dried basil or a few tablespoons of basil from a tube.)

  • 2 cups cottage cheese (see note)

  • 4 well-beaten eggs

  • 1/2 cup coarsely grated Parmesan cheese

  • 1 teaspoon Italian herb blend

  • 1 teaspoon garlic powder

  • 4 folio parmesan cheese wraps (see note)

  • 2 cups grated mozzarella cheese

  • Sprinkle an additional 1/3 cup coarsely grated Parmesan cheese on top (maybe optional, but good).

  1. Preheat oven to 375F/190C and spray a deep rectangular casserole dish with nonstick spray. (See my notes on the dishes I used.)
  2. Heat the olive oil in a large frying pan over medium heat and sauté the finely chopped onions until golden brown.
  3. Next, press the onion to the side of the pan, crumble the ground beef and Italian sausage, and squeeze the sausage out of the casing. Loosen the ground beef and Italian sausage with a turner and cook until nicely browned and all liquid has evaporated.

  11. Separate layers of folio, meat sauce, cottage cheese mix, and mozzarella. Sprinkle grated parmesan cheese on top if desired.

Note

I used a nice Le Creuset baking dish that was 7.5 inches by 11.5 inches by 3 inches deep. Try using a deep plate if possible.

I used my favorite hot turkey Italian sausage for this recipe, but pork sausage works too! You can use ricotta cheese instead of cottage cheese if you prefer. If you don’t have Folios, use a firm, sliced ​​white cheese like Provolone. parmini lasagne noodles (affiliate link) For the noodle layer.If you use a dish that is larger and less deep than the one we had, you may need a total of 6 folios to cover the dish. Laotian tomato basil sauce (affiliate link) At my grocery store. This sauce has only about 20 carbs in the entire jar.
