I had a wonderful mother who made homemade bread three times a week for a family of ten children.I miss her and out of all the recipes on my blog this recipe is Mom’s Artichoke and Artichoke Dipping Sauce What I miss my mother the most. My mom served this as a special side dish, so today I’m taking it as a favorite Friday pick to remind me of it as an option for my Easter dinner!

I grew up in a family where most of us considered fresh artichokes a delicacy thanks to an amazing mom who taught me to love them. Artichokes were too expensive for him to get as much as he wanted. Growing up, I learned that some people don’t eat artichokes and don’t know how to cook them.

My mother always steamed artichokes in a big pot. But lately, I’ve been making artichokes in my Instant Pot!

Whichever cooking method you use, try my Artichoke Dipping Sauce, a low-carb version of my mom’s sauce made with Miracle Whips. But I prefer mayo and no carbs.

I like my mom’s artichoke dipping sauce hot or cold, but melted butter works great with warm artichokes too. And definitely fresh artichokes I love to make as a treat!

How did my mom’s method of preparing artichokes become more budget-friendly?

My mother always cuts raw artichokes in half and cuts off the “chalk” part before steaming them. This definitely made them more child friendly, but I noticed she was doing it too, as she was cooking for 12 people and the method created perfect portion control. It was several years later. Everyone got half an artichoke!
