An easy macaroni salad recipe perfect for a party. You can save time on the day by making it the day before. Just boil the pasta and mix everything together. I usually mix the summer tomatoes with the other ingredients in a bowl while the pasta is boiling. Tomatoes release juice, making the sauce creamy and saucy.

pasta: wheat or gluten free uncooked elbow macaroni
vegetable: Ripe tomatoes such as plums, vine-ripe tomatoes, or Campari tomatoes, sliced black olives, and chopped red onion.
Herbs and Spices: garlic powder, dried oregano, salt (or adobo seasoning salt), black pepper
Salad dressing: mayonnaise and white vinegar (optional, add a few dashes of Frank’s Hot Sauce)

The combination of these flavors works just fine. Here are my suggestions, but honestly, I’m not going to change anything. Here’s how to make it.
Boil the macaroni in salted water according to package directions. Drain and rinse with cold water.
Meanwhile, in a large bowl, combine mayonnaise, vinegar, tomatoes (and any tomato juice), olives, onions, garlic powder, oregano salt, and pepper. Mix well.
Once the pasta is cooked, add it to the bowl and mix well.
Serve immediately at room temperature or refrigerate and enjoy later. You may need to add more mayonnaise if you plan to eat it later.
