This simple pasta is one of my favorite recipes to make in May. Spring and early summer produce such as asparagus, peas, cherry tomatoes and squash are just beginning to hit the farmer’s market, and fresh herbs are plentiful. It takes about 30 minutes to complete, so it’s perfect for spring nights when you want to go outside. We think you will love it!
To make this recipe vegan, Skip the cheese. Before serving, sprinkle generously with a drizzle of olive oil and my vegan Parmesan cheese.

Last month’s recipe
Not the food from last month’s blog, Simple Feel Good Food! It was a green tahini lentil salad topped with colorful spring vegetables and a creamy herb-flecked dressing.
What I love about this recipe is that you can vary the dressing depending on what herbs you have on hand. It was so much fun to hear what combinations you used! Thank you for joining us in celebrating the release of our new book.
