this Italian sausage, zucchini and macaroni soup is a long-time favorite soup recipe that I make over and over again at family gatherings and our annual New Year’s Day soup party. Perfect for when the nights are getting cooler, it’s also a recipe worth buying a few small zucchini, even though you still have zucchini from the garden.
So when I wanted to update this soup picture, Kara and I decided to give it a try. Fiber Gourmet Light Elbow (affiliate link) Macaroni soup! I also used a little more ground Italian sausage. These changes brought the carb count down to about 9 net carbs per serving. I think this makes this soup more appealing to many people.

Carla and I are obsessed with Fiber Gourmet Light Pasta! This is Italian made high fiber pasta available in Penne, Rotini, Spaghetti and Elbow. It tastes exactly like regular high carb pasta made with wheat.The only bad news about this pasta is the price. I haven’t been able to find it in any stores near me, but when ordering from Amazon, I’m careful not to choose the two-box pasta-only option. So that’s almost $10 per box. Get a pack of 6 and it’s about $6.66 per box, which is still expensive, but worth it when you want pasta and no carbs. , always creating more recipes. So with this recipe, one elbow cup makes 8 servings of soup. This makes the carb count much lower and the pasta much more affordable.

How to make Italian sausage, zucchini and macaroni soup:

- When sausage is browned, add oregano, basil, spike seasoning, fennel, and black pepper.
- Then add chicken broth (or homemade chicken stock) and petit diced tomatoes with the liquid from the can
- Reduce heat to low and simmer for 30 minutes
- While the soup is simmering, trim off the ends of the zucchini and cut into 4 strips, then into small cubes. Cut about 2 cups of zucchini or add a little more.
- Add the zucchini to the soup and simmer for 15 minutes, reducing the temperature.
- Then add the macaroni (add another cup of water if a significant amount of liquid seems to have evaporated. If the stove cooks hot, add an additional cup or more of water). may be required).

- Two 14.5 oz. canned diced tomatoes (or use a small amount of slow-roasted tomatoes)
- 2 cups of water
- 2 teaspoons dried oregano
- 2 teaspoons dried virgin
- 1 cup whole grain macaroni (see note)
- 3 T fresh basil, chopped (optional, or you can use frozen basil)
- Freshly grated parmesan cheese for soup
