Many parts of the United States are currently experiencing very cold weather for this time of year. I think instant he pot chili is a great idea for dinner when it’s really cold.And I have quite a few chili recipes, but this one Instant Pot Ground Beef Olive Lovers Chili is what I make over and over again.
This chili recipe starts with ground beef that I always have in my freezer. Then add the onions and red bell peppers, cooked briefly, garlic, cumin, chili powder, dried coriander (or otherwise), canned green chillies, beef stock, mashed tomatoes and 2 cans of black olives. .
All of these flavorful ingredients are placed in an Instant Pot and cooked on high pressure for a few minutes. Once cooked, add a little lime juice and serve with plenty of grated cheese and sour cream.
And anyone who loves olives (like me!) will love this low-carb beef chili and olives. It’s a mild chili pepper, so even those who don’t like spicy food can enjoy it. And if you’re not an Instant Pot user, here are my best thoughts on making this olive lover’s chili on the stove too.

How to make Instant Pot Ground Beef Olive Lovers Chili:

- Drain the olives and cut them in half. Then add the olives, 1 diced green chili pepper, 1 beef stock and 2 mashed tomatoes to the Instant He pot.
- Cover, set to high pressure, and simmer 15 minutes. Release the pressure using the quick release.
- Check to see if the peppers feel a little dark, sauté if you prefer darker peppers, and cook over medium heat for a few minutes.
- Add lime juice, stir, and season with salt and freshly ground black pepper.
- Ground beef olive lovers chili is served piping hot and generously garnished with grated cheese and sour cream to be added at the table if desired.

2 cans of black olives (6-ounce cans)

1 4 oz. Green chillies can be diced (see note)

1 14 oz.canned beef soup

2 14.5 oz.canned mashed tomatoes

2 T lime juice (see note)

Season with salt and freshly ground black pepper

- Heat 2 tsp. Olive oil in skillet over medium-high heat. Add minced meat and stir-fry until beef is cooked and nicely browned.add boiled beef instant pot (affiliate link). (If you prefer, you can cook the beef in the Instant Pot and take it out to sauté the onions and spices.)
- While the beef is cooking, peel the onions and cut them into about 1/2-inch squares. Remove the stem and seeds from the red paprika and cut into the same size as the onion.
- Heat the remaining 2 tsp. Heat oil in a skillet (or Instant Pot) and sauté the onions and bell peppers until just soft. Then add the grated garlic, ground cumin Add (affiliate link), chili powder and dried coriander and simmer for a further 2 minutes. Add onions, peppers, and spices to Instant Pot.
- While the onions and peppers are cooking, drain the olives and cut each in half.
- Deglaze the skillet with a can of beef stock and add the diced green chillies and juice, mashed tomatoes, and olives to the Instant Pot. (If you’ve cooked the beef in the Instant Pot and then removed it to cook the onions, peppers, and spices, put the beef back in.)
- Lock the lid, set the Instant Pot to high pressure, and cook for 15 minutes.
- Use QUICK RELEASE to release pressure.
- Check if you want the peppers to be a little thicker, then use the sauté and cook over medium heat until the moisture evaporates and the peppers are the thickness you prefer.
- Add lime juice, stir, and season with salt and freshly ground black pepper.
- Serve hot with sour cream and grated cheese at the table.

- Brown the ground beef as described above and place in a thick soup pot. Cook the onions, peppers, and spices as above, then add all the same ingredients to the soup as above, but use 2 cans (14 oz cans) of beef stock for stovetop cooking.
- Simmer the peppers over low heat for about 45 minutes or until desired thickness.
- Turn off heat, add lime juice, stir, season with salt and freshly ground black pepper, and serve hot.
Note

Uses Anaheim Chili diced green chillies (affiliate link) No jalapenos unless you want it really spicy.
