I love the combination of chicken, tomato, onion, garlic, herbs and chipotle chili peppers in this Instant Pot Chicken Tinga. And this flavorful low-carb Mexican chicken specialty can be served in a variety of ways.

Today I am excited to share this recipe instant pot chicken tingaThis easy chicken recipe uses readily available ingredients to create a Mexican flavored chicken that many people enjoy.

Not only is this delicious, but when I was testing it with my niece Carla, my sister Alison stopped by with my son Judd and invited me to lunch, so I’m confident this recipe is kid-approved. To be honest, I was skeptical that Judd would like it, but we served him a simple kid’s taco with a chicken tinga mixture.

What is chicken tinga?

Tinga A dish from the Puebla region of Mexico. It features shredded chicken cooked in a tomato, chipotle pepper, herb, and onion sauce. Slightly spicy chicken can be served in many different ways, and recipes for this delicious chicken can be found all over Mexico.

What are the ingredients needed for this recipe?

Is this a real chicken tinga recipe?

I’m not going to claim that this is a completely authentic chicken tinga recipe. I skipped adobo’s traditional canned chipotle peppers in favor of easy-to-use ground chipotle chili peppers, perhaps a little less spicy than real tinga. A few years after I first posted this recipe, I tried chicken tinga in Puebla City.

How can you serve chicken tinga?

  • Regardless of how you choose to serve your chicken, I highly recommend adding a few slices of lime to your plate and squeezing it out at the table.

How to make Instant Pot Chicken Tinga:

  1. Remove the streaks from the chicken breast and cut into strips lengthwise.
  2. Sauté the oil in your Instant Pot and heat it to high heat. Cook the chopped onions for about 2 minutes. Add minced garlic and simmer for an additional 1-2 minutes.
  3. Add the chipotle chili peppers, Mexican oregano (or marjoram), ground cumin, and ground thyme, and simmer for an additional 1-2 minutes.
  4. Add chicken strips, diced tomatoes, liquid from can, chicken broth, and sweetener.
  5. Lock the lid and set the Instant Pot to Manual, High, 4 minutes.
  6. When the cooking time is over, let the Instant Pot NATURAL RELEASE sit for 10 minutes before releasing any remaining pressure.
  7. Transfer the chicken to a cutting board and let cool enough to handle.
  8. Sauté while the chicken is cooling, reduce the broth over medium heat for 10 minutes.
  9. Cut chicken into bite-size pieces and return to Instant Pot. 2 to 3 minutes in cooker to ensure chicken is coated with liquid and heated through.
  10. Use your chicken tinga to make tostadas, tacos, burritos, taco salad, or any other Mexican dish you like.

Mexican flavored chicken:

material

  • 4 large boneless, skinless chicken breasts

  • 1 onion, chopped

  • 1 teaspoon minced garlic

  • 1 1/2 T olive oil

  • 1 teaspoon ground chipotle chili pepper (or more, if you prefer)

  • 2 tsp dried Mexican oregano (see note)

  • 1 teaspoon ground cumin

  • 1/2 teaspoon ground thyme

  • 1 T Golden Monk Fruit Sweetener

  • 1/2 cup chicken broth (see note)

  • One 14 oz.Roasted salsa diced tomatoes can be cooked

  • Season with salt and freshly ground black pepper

  1. Trim the chicken breasts to remove unwanted pieces and cut each breast into 3 pieces lengthwise, or 4 pieces if the breast is large.
  2. Finely chop the onion, and if using raw garlic, chop it finely.
  3. Next, sauté the oil in an Instant Pot and heat it to a high temperature. Cook the onions for about 2 minutes. Add garlic and cook for an additional 1-2 minutes.
  4. Add the chipotle chili peppers, Mexican oregano (or marjoram), ground cumin, and ground thyme, and simmer for an additional 1-2 minutes.
  5. Add chicken strips, diced tomatoes, liquid from can, chicken broth, and sweetener.

Note

If you don’t have Mexican oregano, you can use dried marjoram (or skip it).

You can use canned chicken soup, but if you have leftovers in the freezer, use homemade chicken stock.

  • 2-3T of olive oil
  • Add 2 avocados, 1 tablespoon cumin, 1 chipotle chili pepper and 1-2 tablespoons lime juice and mash
  • 1 cup crushed cotija cheese (more or less to your liking)
  • chopped coriander (optional)
  • Slice of lime for serving

Heat the oil in a frying pan and toast the tortillas one at a time, mashing the avocado, cumin, chipotle chili peppers and lime juice. To assemble, spread a thin layer of avocado on top of each crispy tortilla, top with the chicken mixture, sprinkle with cotillahis cheese, and garnish with sliced ​​lime.
