Thanksgiving is fast approaching and many of you will soon have turkey left over, so I am sharing this updated post so you can get it while the big turkey carcass is staring at you !
One of my favorite things about Thanksgiving is simmering a large roasting pan of turkey bones and vegetables on the stove to make the house smell good. It has become a tradition. Personally, I don’t think you can make good turkey soup without turkey broth.
I’ve been making turkey stock for years and am not a stock purist. I think a little Penzees turkey soup base is good for both the turkey gravy and the turkey stock. But if you forgot to order in time or don’t want to use it, read on . There are other tricks to making your turkey stock tastier.
What ingredients are needed for turkey stock?
Is Turkey Stock Gluten Free:
I always use one or the other penzies turkey soup base (affiliate link) or Better than Bouillon Turkey Base (affiliate link) After a little research, I can’t say for sure that either is completely gluten-free. (If anyone has more information, let us know in the comments.) So, if you need it at home, be sure to use a gluten-free turkey base.
Tips on how to make Turkish stocks:

- Start with turkey scraps, including skin, bones, etc.
- Do not add the turkey “guts” that are often stuffed inside the turkey.
- Add plenty of onions, celery, and carrots.
- Cut the vegetables into large pieces so that they can be scooped easily.
- Place turkey scraps and bones, carrots, celery and onions in a soup pot, add a dash of thyme and sage, penzies turkey soup base (affiliate link) Cover with water.
- If you don’t have Penzeys Turkey Soup Base, another brand I’ve used is Better than Bouillon Turkey Base (affiliate link), sold at many grocery stores. (edit: Shirley Gluten free easily Better than Bouillon told me they no longer guarantee their products are gluten-free.)
- If you have a large roasting pan in which you cooked the turkey, boil the stock in the pan.
- Simmer the broth over low heat all day until the flavors are as thick as you like.
- Strain, put in a container and put in the freezer for turkey soup to enjoy all winter long!

- Start with as much turkey scrap as you can save from the turkey. This includes things like skin and bones that you might otherwise throw away.
- Do not add the turkey “guts” that are often stuffed inside the turkey.

- Cut the vegetables into large pieces so that they can be scooped easily at the end.
- Place turkey scraps and bones, carrots, celery and onions in a large soup pot, add a dash of thyme and sage, penzies turkey soup base (affiliate link) Cover with water.
- If you don’t have Penzeys Turkey Soup Base, another brand I’ve used is better than the bouillon turkey base sold at many grocery stores.
- If you have a large roasting pan in which you cooked your turkey, simmer the stock in the pan. This will cook all the charred parts and skin of the turkey and add flavor to the stock.
- Simmer the broth over low heat all day until the flavors are as thick as you like.
- Strain, put in a container and put in the freezer for turkey soup to enjoy all winter long!
