Honey Sriracha Chicken and Broccoli Meal Prep Bowl
It’s been a while since I posted a new meal prep recipe, but I made this just before my trip to Italy and loved the results. It is rich brown rice. Some other meal prep recipes I love making are this taco salad meal prep, Greek chickpea salad, and these freezer breakfast burritos.
This is perfect if you like a hot lunch. If you’re using a freezer-safe container, it’s great to freeze for freezer meals. You can also replace it with grains or cauliflower rice.

To refrigerate:
Divide among 4 meal prep containers. Cover and refrigerate for 4-5 days. If reheating, heat in the microwave for 2-3 minutes.
To freeze:
Divide into 4 freezer-safe meal prep containers. Freeze, covered for up to 3 months. If reheating, transfer to the refrigerator the night before or reheat from frozen every 30 seconds.

Doubles as a main dish, this easy meal prep honey sriracha chicken dish is made in a baking sheet and ready in no time!
olive oil spray
3chicken breast, diced into 1 inch (24 oz) pieces
1egg white, beaten
2tablespooncornstarch
1 1/4tea spoonkosher salt, Divided
1broccoli head, cut into florets
2tea spoonsesame oil
2cupbrown rice, cooked
Honey Sriracha Sauce:
2tablespoonhoney
2tablespoonSriracha sauce
1tea spoonseasoned rice vinegar
1tea spoonsesame oil
2green onion, sliced
1tea spoonblack sesame and white sesame, or as needed
Preheat oven to 425F. Place the chicken in the egg whites, then in the cornstarch, and season with 3/4 teaspoon salt. Add chicken, leaving space. Bake in oven for 10 minutes.
Remove the chicken from the oven, flip it over, add the broccoli to the other half, drizzle with 2 tsp sesame oil, and season with 1/2 tsp salt and pepper. Return to oven and cook until chicken is cooked through and broccoli is tender, about 10 minutes.
Meanwhile, in a medium bowl, whisk honey, sriracha sauce, rice vinegar, and sesame oil until smooth. Add chicken and coat with sauce.
Divide all ingredients into 4 cooking bowls and top with green onions and sesame seeds.
