Skillet turkey, sweet potatoes and beans
This dairy and gluten-free winter skillet recipe is a variation of my summer ground turkey skillet, but with sweet potatoes and the perfect blend of protein, carbs, and fat. Similar to a sweet potato black bean bowl, but faster and made in one skillet. It is a versatile type that allows you to change the ingredients according to the ingredients, and it cooks well, so you can enjoy leftovers. Ground Turkey Skillet Ingredients
Ground Turkey: Get 93% lean turkey meat.
onion: Chop 1/4 cup of white, yellow, or red onion.
Tomato paste: Fry 2 tablespoons of tomato paste with the onion. Not sure what to do with leftover paste? Freeze in an ice cube tray and keep on hand for future recipes.
sweet potato: Peel 2 medium potatoes and cut into 1/2-inch cubes.
Black bean: Rinse and drain canned black beans.
corn: Use fresh or frozen corn kernels.
Tomato: Dice a large tomato.
Jalapeno: Leave the seeds and ribs in the pepper for a spicy dish, or remove them if you like a milder dish.
garlic: Chop 1 clove.
coriander: Add fresh cilantro to the skillet for additional garnish. If you don’t like cilantro, please omit it.
seasoning: cumin, salt
Chicken broth: Feel free to sub the vegetable soup if that’s what you have.
Garnish: Serve with sliced avocado and lime.
How to make this ground turkey skillet
turkey: Brown the turkey in a large skillet over high heat and season with salt and cumin.
onion: After about 5 minutes, turn the meat over and cook the onions and tomato paste for 1 minute.
Remaining ingredients: Add the sweet potatoes, beans, corn, tomatoes, jalapeños, garlic, and coriander, add the broth, mix, and season with the remaining salt and cumin.
Boil: Cover the skillet and simmer over low heat for 12-14 minutes or until potatoes are tender. Serve turkey mixture with lime wedges, cilantro, and avocado.
How to Meal Preparation Turkey Skillet
This easy turkey skillet dinner is perfect for meal prep. The onions, sweet potatoes, jalapeños, and coriander can be diced ahead of time, so most of the prep work is done when you’re ready to cook. Leftovers are great for meals throughout the week. Keeps in the refrigerator for 4 days and fully reheats in the microwave.You can also freeze the turkey mixture for up to 3 months.
variation:
protein: Swap turkey for lean sirloin.
Tomato: If you don’t have fresh tomatoes, use canned diced tomatoes.
vegetable: Add more spinach or bell peppers for more veggies.
Make it spicy: Top the bowl with hot sauce for an added kick.
cheese: Sprinkle shredded cheddar cheese on top.

14ouncesweet potato, from 2 medium pieces, peeled and diced into 1/2-inch pieces
1lblean turkey meat 93%
1/4cupchopped onion
2tablespoontomato paste
3/4cupcanned black beans, Rinse and drain
3/4cupcorn kernels, fresh or frozen
1large diced tomatoes
1jalapeno, diced
1clovesgarlic, chopped
2tablespoonchopped coriander, Also for decoration
1 1/2tea spooncumin
1 1/4tea spoonkosher salt
1/2cupchicken soup
sliced lime, for serving
FourounceAvocado, sliced
Heat oil in a large frying pan, sear the turkey, and season with 1 teaspoon salt and 1 teaspoon cumin.
Crush and cook meat until turkey is fully cooked, about 5 minutes.
Turn the meat to the side, spray the other side with oil, add the onion and tomato paste and cook for 1 minute.
Add sweet potatoes, black beans, corn, tomatoes, jalapeno peppers, garlic and cilantro and stir in chicken broth.
Add 1/4 teaspoon salt, or to taste and cumin.
Stir, cover, and cook over low heat for 12-14 minutes or until sweet potatoes are tender.
