The technique of making cuts in the top of the chicken to increase the surface for the marinade to coat is very similar to the trick of grilling juicy chicken breast! The chicken cooks in minutes, chopped tomatoes and olives for topping, and crushed feta cheese takes no time at all.

- boneless, skinless chicken breast
- Olive oil (affiliate link)
- freshly squeezed lemon juice (I used frozen lemon juice)

What if you don’t have time to marinate your chicken?
With no advance planning, this Greek chicken dinner can be made with just an hour or two of marinating in the fridge. You can even start marinating your chicken early in the morning (or even when you go to work in the morning) and cook it that evening.
What if your family doesn’t like Kalamata olives?
If you don’t have the bitterness of Kalamata olives at home, you can make this recipe with regular canned black olives, or skip the olives entirely.

How to make Greek chicken with tomato, olive and feta toppings:

- Cut chicken breasts down and pound them to even thickness, about 1/2 inch.
- Make a cross cut in the top of the chicken breast.
- Combine olive oil, lemon juice, chopped fresh oregano, and minced fresh garlic.
- Take 1/4 cup of the mixture for the topping and pour the rest over the chicken and marinate in the refrigerator for at least 1 hour and all day.
- Before cooking the chicken breast, chop the tomatoes, slice the kalamata olives, crumble the feta and stir in the reserved marinade.
- Heat a little olive oil in a heavy-bottomed pan.
- Grill the chicken for 3-4 minutes on each side and season with salt and freshly ground black pepper.
- Then serve the chicken with the toppings spooned on it. Enjoy it hot!

This is great for a low carb meal of lemony green beans, easy grilled greek zucchini, grilled mushrooms, grilled asparagus and parmesan cheese, or cauliflower rice with basil, parmesan cheese and pine nuts.
A tastier dinner with chicken:
4 boneless, skinless chicken breasts.
1/2 cup olive oil (more if cooking chicken)
1/2 cup freshly squeezed lemon juice (I used freshly frozen lemon juice)
2 teaspoons fresh oregano, chopped (or pinch, use 1 teaspoon dried oregano)
2 tsp finely chopped fresh garlic
1 cup chopped grapes or cherry tomatoes (I cut them in quarters lengthwise)
1/3 cup kalamata olives, sliced (cut in quarters lengthwise)
1/2 cup crushed feta cheese
Season with salt and freshly ground black pepper
- Remove any visible fat or unwanted parts from the chicken breast and make a small diagonal cut in the top. Be careful not to cut too much into the chicken.
- Mix olive oil, lemon juice, oregano and minced garlic.
- Remove 1/4 cup of that mixture and set aside for topping later.
- Place the chicken pieces in a glass baking dish or Ziploc bag and marinate in the refrigerator for at least 1 hour or all day.
- When you’re ready to cook, take the chicken out of the fridge, let it come to room temperature, and chop up the olives and tomatoes.
- Gently combine chopped tomatoes, olives, crushed feta cheese and reserved marinade.
- Warm about 1 tsp. Add olive oil to a large heavy skillet over medium-high heat. (I 12 inch cast iron skillet (affiliate link) Perfect for grilling meat on the stove. )
- Remove the chicken pieces from the marinade and place them in the frying pan with the cracked side down so that they do not overlap.
- Bake the top side for 3-4 minutes or until nicely browned, then flip over and bake the other side for an additional 3-4 minutes. Chicken should be firm to the touch (but not hard).
- Season the chicken with salt and freshly ground black pepper. (Be careful not to add too much salt, as feta cheese is salty.)
- Arrange chicken on a platter or individual serving plates and spoon over tomato, olive, and feta toppings. while it’s hot.
