When I found the idea for cottage cheese egg muffins online many years ago, I loved the idea of a high protein muffin using cottage cheese, eggs, parmesan cheese, almond meal and a little bit of flour, so I decided to make one. As a breakfast muffin. And I discovered that the almond flour and a little bit of flour gave these breakfast muffins a nice texture that was different from the keto egg muffins I’ve been making for years.

2/3 cup cottage cheese (see note)
1/2 cup grated parmesan cheese
1/4 cup whole wheat flour (see note for gluten-free options)
2/3 cup almond flour
1 teaspoon baking powder

4 beaten eggs
3 pieces of grilled bacon

- Microwave bacon until crisp and crumble. (I use cooked bacon from Costco which made this quick.
- Thinly slice the green onion.
- Cottage cheese, Parmesan cheese in a bowl, white whole grain, almond flour (affiliate link), salt, water, beaten eggs. Mix well.
- Gently mix the crushed bacon and green onions into the batter until well combined.
- Fill muffin cups 3/4 full with cottage cheese and egg mixture.
- Bake for 25 to 30 minutes or until muffins are nicely browned.
- Serve hot or at room temperature.
To make a gluten-free version, use white whole wheat flour. flaxseed meal (affiliate link) or cannabis seeds (affiliate link), or a combination of both. Some people reported using quinoa flakes, but I think a gluten-free flour mix would work as well.
Use regular or low-fat cottage cheese, whichever you prefer.
Muffins can be refrigerated and reheated in the microwave. (I cut it in half lengthwise before heating it. Be careful not to heat it in the microwave for too long as it will harden.)
I haven’t tried freezing them, but I think they freeze just fine.
