It is believed to have started in the 1930s at the Divan Parisian Restaurant in New York City. The dish is named after the word “divan” which means restaurant and long, low sofas without backrests.

Classic recipes for chicken divans typically include cooked chicken, steamed broccoli, mayonnaise, sour cream, or creamy mushroom soup in a rich, creamy sauce, topped with cheese and breadcrumbs. Casseroles are typically baked until golden brown and bubbly.

Today there are many variations of chicken divan. My version uses light ingredients that also have gluten-free options.To make a vegetarian version, you can use tofu or other chicken substitutes.

Most recipes call for canned broth and more fat, but this recipe is significantly lighter to preserve flavor without added fat.

  • First, let the casserole cool completely before freezing. You can freeze the whole casserole or divide it into individual servings for easy reheating.
  • Then wrap tightly in plastic wrap or aluminum foil and place in a freezer-stable container or freezer bag. Label the container or bag with the date and contents for easy identification later.
  • When you’re ready to reheat, thaw in the refrigerator overnight, then bake in a 350°F oven for 30-40 minutes, or until thoroughly heated and bubbly.
  • Freezing can extend the shelf life, but be aware that the texture of the broccoli may soften a bit and the sauce may separate a bit. It has no effect.

  • Preheat oven to 350 degrees Fahrenheit. Spray a 9 x 13 inch baking dish with olive oil spray.

  • Add 1 teaspoon of olive oil and garlic to a large frying pan and sauté over medium heat for 30 seconds. Add the broccoli, 1/4 teaspoon kosher salt, and 1 tablespoon water and cover.

  • Cook for 3 minutes until the broccoli is soft and crisp. Transfer to baking dish.

  • Beat the thicker side of the chicken breast so that both sides are even. Coat chicken with mayonnaise and season with 1/2 teaspoon salt and black pepper.

  • Heat the frying pan to medium heat, and when the oil is hot, grill the chicken for about 5 minutes on each side.

  • Remove from heat and transfer chicken to a cutting board. When cool, cut the chicken into bite-sized pieces.

  • Reduce heat in skillet to medium. Add and melt the butter and remaining oil, add the shallots and cook until tender, 2-3 minutes.

  • Sprinkle with flour and stir for about 1 minute. Add broth, milk, 1/2 teaspoon salt and sherry and simmer over low heat for about 1 1/2 minutes. Remove from heat and stir in half of the Swiss cheese.

  • Pour half the sauce over the broccoli and mix. Arrange chicken on top and cover with remaining sauce.

  • Sprinkle with the remaining Swiss cheese, grated Parmesan cheese and top with bread crumbs.

  • Sprinkle a little oil on top. Bake for 30 minutes, until hot and golden.
