How to make Chicken Broccoli Alfredo Casserole:

  1. Preheat oven to 375F/190C. Spray a casserole dish with olive oil or nonstick spray.

  6. Gently stir the partially cooked broccoli into the chicken sauce mixture. Add 1 cup of grated Swiss cheese and mix gently.
  7. Transfer the mixture to a casserole dish.
  8. Top with remaining Swiss cheese and Parmesan cheese.
  9. Bake for 25-30 minutes or until surface is charred.
  10. Serve hot.
  11. This will keep for several days in the refrigerator. Broccoli softens a little when frozen, but freezing, thawing, and reheating doesn’t hurt.

  • 2 tsp olive oil

  • 1 teaspoon minced garlic

  • One 15 oz. jar Rao’s Alfredo Sauce (see note)

  • 1/2 teaspoon poultry seasoning

  • 1/2 teaspoon ground thyme

  • 1 teaspoon spike seasoning

  • 1/4 tsp. Black pepper (as much as you like)

  • 1/2 cup sour cream

  • 6 cups diced cooked rotisserie chicken breast (see note)

  • 6 cups (or a little more) broccoli florets

  • 1 1/2 cups grated swiss cheese

  • 1/2 cup grated parmesan cheese

  1. Preheat oven to 375F/190C.
  2. Spray a 9-inch x 13-inch casserole dish with olive oil or nonstick spray.
  3. Finely chop the onion, heat a frying pan (large enough to hold all the ingredients) with olive oil, and fry over medium to high heat until it is browned.
  4. Add minced garlic and simmer for an additional 1-2 minutes.
  5. When the onions and garlic are cooked through, add the alfredo sauce, chicken seasoning, ground thyme, seasoning spikes, black pepper, and sour cream to the skillet. Stir to combine and begin simmering the mixture over low heat.
  6. Cut a rotisserie chicken (or chicken breast you cooked yourself) and add it to the sauce mixture. Simmer for about 5 minutes.
  7. Cut the broccoli into bite-size pieces, place in a bowl (or large 8-quart glass measuring cup), and microwave the broccoli for 1-2 minutes, depending on how you prefer to cook.

  9. Add 1 cup of grated Swiss cheese and lightly mix the cheese.
  10. Then transfer the chicken and broccoli sauce mixture to a casserole dish
  11. Top with remaining Swiss and Parmesan cheese
  12. Bake 25 to 30 minutes or until mixture is hot and bubbly and surface begins to brown.
  13. Serve hot.
