We were so excited when we finally had the combination of ingredients!

This was inspired by a recipe for chicken and asparagus with a curry sauce made with canned cream of chicken broth, an ingredient I rarely use these days. I prefer this new low carb recipe but remember how much I loved the old recipe so I decided to keep the old recipes and link them so people can eat their choice .

What curry powder did you use in this chicken and asparagus bake?
Any kind of mild curry powder will work for this recipe, but Penzeys Sweet Curry is one of my favorites.
What if you don’t like curry?
I don’t think this recipe would be as great if the curry powder was just omitted. Its flavor really binds the ingredients together. However, if you have chicken and asparagus and don’t like curries, try chicken and asparagus with 3 cheeses or chicken and roasted asparagus with tahini sauce.

How to make Chicken and Asparagus Baked in Creamy Curry Sauce:

- Preheat the oven and spray a casserole dish with nonstick spray.
- Cut off the boneless and skinless chicken breast and cut into thirds lengthwise.

- Put the chicken stock in a frying pan over medium heat and fry while scraping the bottom. Let the stock simmer for a few minutes, then whisk the lemon juice and curry powder into the stock, reduce the heat to medium-low, and add the cream cheese.
- When the cream cheese melts, mix it with a whisk, and when it almost melts, add mayonnaise and sour cream and mix until smooth.
- Lightly stir the asparagus and chicken cubes in a bowl, then combine with the sauce and 1 cup of cheese and stir lightly again.
- Place the chicken and asparagus mixture in a casserole dish and top with another cup of grated cheese.
- Bake 30 to 35 minutes or until casserole is bubbly and surface is beginning to brown.
- Serve warm. Leftovers may be eaten again!

- Preheat oven to 350F/190C. Spray a large glass or dish casserole dish with nonstick spray or olive oil. (I used a narrow 8″ x 13″ plate, but anything close to that size should work.)
- Cut off the fat and unnecessary parts from the chicken breast and cut it vertically into 3 equal parts.
- Heat 1T of olive oil in a large nonstick skillet over medium-high heat.When the oil is hot, add the chicken and season it. poultry seasoning (Affiliate link) Season with salt and pepper and bake until both sides of the chicken are browned.
- Transfer chicken to a cutting board and let cool. Then cut into chunks. Transfer chicken to a large bowl.
- While the chicken is grilling, cut the cream cheese into cubes and soften on the counter, then measure out the lemon juice, curry powder, sour cream, mayonnaise, and mozzarella cheese.
- Snap a piece of asparagus to see where the wood ends. Next, cut the asparagus into 2 inch pieces.
- After removing the chicken from the pan, add 1 tsp. Add olive oil, add asparagus, and cook over medium-high heat for just 2-3 minutes. Place asparagus in bowl with chicken.
- Add the chicken stock to the pan and cook over medium heat, scraping the bottom to remove any browned chicken. Lower the heat to medium-low and add the cream cheese cubes.
- When the cream cheese melts, mix it with a whisk, and when it almost melts, add mayonnaise and sour cream and mix until smooth.
- Lightly stir the asparagus and chicken cubes in a bowl, then combine with the sauce and 1 cup of cheese and stir lightly again.
- Place the chicken and asparagus sauce mixture in a sprayed casserole dish and top with another cup of grated cheese.
- Bake 30 to 35 minutes or until casserole is bubbly and surface is beginning to brown.hot serve
