How to make buffalo chicken lettuce wraps
Lettuce wraps are low-carb, keto, gluten-free, low-calorie, and don’t interfere with the flavor of your filling. Some tips when making lettuce wraps:
- Start by making the shredded chicken. I like to do this in my slow cooker, but you can also do this in your Instant Pot. You can also use rotisserie or canned leftover chicken breast in a pinch.
- Find a lettuce leaf large enough to hold the filling. I like to use iceberg lettuce for larger cups. Romaine lettuce and baby romaine are also excellent.
- Butter or Boston lettuce leaves are small but great.
What to serve with our Buffalo Chicken Lettuce Wrap:
- If you want something crispy, serve with baked chips on the side.
- If desired, you can turn this into a large chopped salad by simply serving this in a bowl over chopped lettuce.
- To keep it low-carb, serve with celery sticks or carrot sticks and blue cheese dip.

Slow cooker method:

In a slow cooker, combine chicken, onions, celery stalks, garlic, and broth (just enough to cover chicken; use water if the can of broth isn’t enough).

Remove chicken from pan, set aside 1/2 cup broth and discard the rest.

Shred chicken with 2 forks, return to slow cooker with 1/4 to 1/2 cup broth and hot sauce, and cook over high heat for an additional 30 minutes. Makes 3 cups of chicken.

Remove chicken from pan, set aside 1/2 cup broth and discard the rest. Shred chicken with 2 forks, return to pot with 1/4 to 1/2 cup broth and hot sauce, and sauté for 2 to 3 minutes. Makes 3 cups of chicken.
