A breakfast strata is like a good breakfast French toast. It’s perfect for entertaining as you have to prepare everything the night before and let it sit in the fridge overnight. The next morning, pop it in the oven and your breakfast is ready.
Variation of breakfast strata
You can easily replace mushrooms with asparagus or bell peppers.
Substitute diced ham or cooked bacon for sausage.
Skip the meat and go vegetarian.
Make it with your favorite cheese. Gruyère is a delicious option.

Breakfast Strata with Sausage and Mushrooms is a delicious freshly prepared breakfast casserole made with day-old bread, eggs, cheese, sausage and mushrooms.
8Ozwheat ciabatta bread, or sour dough, cut into 1-inch cubes
12Ozturkey breakfast sausage, or chicken sausage, casing removed
2cupfat-free milk
1-1/2cupLow Fat Shredded Sharp Cheddar Cheese, 4 oz
Tenbig egg
1/2 cup Chopped green onion
1cupsliced mushrooms
1/2teaspoonpaprika
1teaspoonkosher salt
2tablespoongrated parmesan cheese
Preheat oven to 400 degrees Fahrenheit.
Arrange bread cubes on a baking sheet. Bake at 400° for 8 minutes or until toasted.
Heat a skillet over medium-high heat. Add sausage to pan; Cook for 7 minutes or until browned, stirring to crumble.
In a large bowl, combine milk, cheese, eggs, parmesan cheese, paprika, salt and pepper and whisk.
Add bread, sausage, scallions, mushrooms and mix well to coat bread. Spoon mixture into a 13×9-inch baking dish. Cover and refrigerate 8 hours or overnight.
Preheat oven to 350°F.
