BBQ Chicken Pineapple Skewers

These easy BBQ chicken pineapple skewers are amazing! The perfect summer dish with moist, flavorful chicken and sweet, juicy pineapple.

These delicious little BBQ chicken pineapple skewers are not only perfect for summer vacation cookouts, but they’re also perfect (and easy enough) for a balmy weeknight dinner. My family is obsessed with them!

The secret to this easy barbecue skewer is the marinade. Tangy and flavorful!

  • ketchup
  • Honey
  • Vinegar
  • Worcestershire sauce
  • garlic
  • paprika + chili powder + salt + pepper

Marinate the chicken for at least 2 hours and up to 24 hours.

I think this skewer would be much tastier with chicken thighs, but I used both types of meat to make this skewer, so you can’t go wrong with either.

If using chicken breast, be careful not to overcook the skewers. Even a small piece of meat will cook quickly!

One of the big advantages of using chicken thighs is that they don’t dry out like chicken breasts (unless they’re significantly overcooked). Don’t be that person. 😉

To be honest, I understand that many people consider the thigh to be the best part of the chicken, and I enjoy its flavor and juiciness, but I prefer the process of removing the fat. I don’t like chicken, so I only use thigh meat occasionally. Even with pre-trimmed chicken thighs, my kitchen does extra trimming.

No matter which part of the chicken you choose, if you pay attention to the cooking time, it will turn out great.

grill/cook options

I only use pellet smokers/grills on all my grills. For this recipe, skewers are cooked at 375°F for a few minutes on each side.

A regular propane or charcoal grill will work just fine.

If you don’t have a grill, try toasting the skewers on a foil-lined, oiled baking sheet for 3-4 minutes on each side (watch closely).

I think you can also put the chicken, pineapple, peppers and onions in the air fryer (without the skewers) and cook it that way. A very heartwarming recipe!

There are few things in this world that I love more than grilled pineapple. The flavorful, tender chicken is also very good, but what really gets me is the juicy, caramelized pineapple.

Indeed, the whole combination of tangy barbecue flavors, sweet and juicy pineapple, and crunchy tender vegetables is an absolute winner.

We love these skewers and make them all the time. It’s too good to be limited to just holiday barbecues and cookouts.

BBQ chicken pineapple skewer

  • 2/3 cup (180 g) ketchup
  • 1 tablespoon Honey
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon garlic, minced (or 1 1/2 teaspoons garlic powder)
  • 1/2 tea spoon sweet or smoked paprika
  • 1/2 tea spoon coarse salt, kosher salt
  • 1/4 tea spoon Chili powder
  • 1/4 tea spoon black pepper
  • 1 and a half to 2 lb Cut boneless, skinless chicken breasts or thighs into 1 1/2-inch pieces.
  • 1 Moderate pineapple
  • 2 Moderate peppers, any color
  • 1 Moderate red onion
  • Combine ketchup, honey, vinegar, Worcestershire sauce, garlic, paprika, salt, chili powder, and black pepper in a medium bowl.

  • Place chicken in a gallon-sized resealable bag or shallow dish. Pour the marinade over the chicken and toss to evenly coat. Seal the bag or cover the dish and chill in the refrigerator for 2 to 24 hours.

  • Preheat a pellet grill or regular grill to medium/medium-high heat.

  • Cut pineapple, peppers, and onions into 1-1/2-inch pieces.

  • Thread chicken, pineapple, peppers, and onions onto skewers. Order isn’t necessarily important, but I string it like this: onion, pepper, pineapple chicken (repeat about 4 times for a 12-inch skewer). If the chicken is very long, fold it in half before skewering.

  • Cook until the chicken is cooked through, flipping the skewer once. For chicken breasts, it takes about 4-5 minutes per side, and for chicken thighs, about 6-7 minutes per side. Consume immediately.

pineapple: Depending on the size of the pineapple, you may end up with a little bit left over, so be careful not to contaminate it during the threading process (using raw chicken). Leftover fresh pineapple can be served with the skewers if desired. I haven’t tried this recipe with canned pineapple chunks, but I think it’s okay if you don’t have fresh pineapple.
Vegetables + Onions: The peppers and onions add great flavor (and are really delicious when grilled), but feel free to omit them if you prefer.
chicken: Marinated chicken is very good, and grilled whole chicken breasts and thighs are also delicious.
