Baked penne with sausage, a recipe that uses fiber gourmet light pasta to keep the sugar down, is delicious. This is an easy-to-make pasta casserole that the whole family will love, and it’s lower in carbs than you can imagine!

Years ago I created this recipe sausage grilled penne, and I must have had it for lunch the last 300 times when I was teaching at school! I used to make it for weekend servings and eat it over and over again for lunch and dinner.

I made it with a brand of pasta that claimed to be low in carbs, but I removed the recipe from my blog after it was taken to court and found those claims to be inaccurate. But now (big drumroll here) i am making it again Fiber Gourmet Light Penne (affiliate link) It has more fiber and far fewer carbohydrates than regular pasta.

And in case it wasn’t obvious, I’m obsessed with Fiber Gourmet Pasta! I’ve made a few delicious dishes with parmini pasta, zucchini noodles, and spaghetti squash, and I love finding products that are significantly lower in carbs and taste like real pasta. . I don’t think I realized how much I missed regular pasta until I found this product.

What are the required ingredients?

  • Hot (or Mild) Pork Italian Sausage
  • lao pasta sauce (affiliate link), I used tomato basil sauce
  • grated mozzarella cheese
  • grated monterey jack cheese
  • Coarsely grated parmesan cheese

Here are the two ingredients you’ll use in this recipe and a few tricks to help cut down on carbs.First, I use Fiber Gourmet Light Penne (affiliate link) and make 8 oz. For some people, the biggest drawback to Fiber Gourmet Light Pasta is the price. I couldn’t find a cheap one that was sold in individual boxes when shipping was added. The best price I found was on Amazon where I bought the 6 box package and got it for $6.66 per box (previously with a 12 pack he had the price reduced to $3.99 per box, but It no longer exists.) fiber gourmet site, and in some parts of the country it is sold over the counter. For me, I was so excited to eat ‘real’ pasta with less carbs, so I bought a big package.

Can this recipe be made with regular penne pasta?

I haven’t tried it, but I’m pretty sure you can make this recipe with regular penne pasta.I wonder if the Fiber Gourmet Light Penne is bulky when cooked due to the amount of fiber. , used 13.5 ounces of branded pasta in the package.

Could you reduce the amount of cheese in this recipe?

A cheesy mix of mozzarella, Monterey Jack, and Parmesan combined with pasta, sauces, and sauces is what makes this recipe so good (and low in carbs). But if you want less cheese (or less fat), adjust to taste.

How to make baked penne with sausage:

  2. Preheat oven to 375 F/190C.
  3. Boil salted water in a pot.
  4. Add pasta and boil for 17-18 minutes or until al dente. (Fiber Gourmet Light Pasta will take longer to cook due to the fibers.)
  5. Cook the sausages well over medium-high heat while the pasta is cooking.
  6. Then add the Laotian tomato basil sauce (or your favorite sauce) and simmer over medium heat for about 5 minutes.
  7. Once the pasta is cooked, drain well.
  8. Spray a 9-inch X 13-inch casserole dish with nonstick spray.
  9. Form a layer of pasta in a baking dish.
  10. Then add the sausage/sauce mixture.
  11. Topped with mozzarella cheese.
  12. Bake for 20 minutes, then remove from the oven and stir briefly to incorporate the melted cheese into the pasta.
  13. Top with Monterey Jack cheese and grated Parmesan cheese and bake for an additional 15-20 minutes.
  14. Serve warm with parmesan cheese if desired.
  15. This freezes very well in an airtight container or bag. I like to freeze individual serving size portions to eat later for lunch.

Eat a low-carb diet:

Nothing beats a crisp green salad or cooked green pasta. Baked penne with sausage, sautéed spinach with garlic and parmesan cheese, lemon parmesan kale salad, spinach goat cheese salad, kale and arugula. Serve with salad or Karin’s favorite baby arugula salad as a side dish.

  • 1 teaspoon salt (for the pasta water)

  • 5 Link Hot (or Sweet) Pork Italian Sausage

  • 24 oz.Laotian tomato basil sauce

  • 2 cups grated mozzarella cheese

  • 1 cup grated Monterey Jack cheese

  • 1/2 cup coarsely grated Parmesan cheese

instructions

  1. Preheat oven to 375 F/190C.
  2. Boil salted water in a large pot.

  4. While the pasta is cooking, squeeze the sausage out of the casing and cook in a large skillet over medium-high heat until well cooked.
  5. Then add Rao’s Tomato Basil Sauce (or your favorite sauce), reduce heat to medium, and let the sauce simmer with the sausages for about 5 minutes.
  6. Drain the pasta well as soon as it is cooked.
  7. Spray a 9-inch X 13-inch glass or dish casserole dish with nonstick spray.
  8. Form a layer of pasta in a casserole dish.
  9. Next, make a layer of sausage/sauce mixture.
  10. Topped with mozzarella cheese.
  11. Bake for 20 minutes, then remove from the oven and stir gently to coat the pasta with the cheese.
  12. Top with Monterey Jack cheese and grated Parmesan cheese and bake for an additional 15-20 minutes until lightly browned.
  13. Serve warm with parmesan cheese if desired.
  14. This freezes very well in an airtight container or bag. I like to freeze individual serving size portions to eat later for lunch.

Low Carb / Low Glycemic / South Beach Diet Suggestions:
If you use the Fiber Gourmet Light Penne I used (and have a reasonable serving size), this baked penne with sausage makes a good meal for a low-carb diet. I’ve had this (along with the aforementioned pasta) all along, but I don’t believe fiber gourmet pasta is approved in South Beach, and this recipe is definitely fatty, even in South Beach.
