8ouncegruyere cheese, Shredded (I like Finlandia)

1cuplow fat milk
½tea spoonkosher salt
freshly ground black pepper, taste
Preheat oven to 350 degrees Fahrenheit. Spray a 9-inch x 13-inch casserole dish with cooking spray and set aside.
In a large skillet, cook over medium heat until the bacon is fully cooked. Use a slotted spoon to transfer the bacon to a paper towel-lined plate.
Remove and discard all but 2 tablespoons of bacon grease and add the shallots.
Sauté the shallots until fragrant, about 2 minutes.
Add half the spinach and mix with the shallots, add the rest and mix again.
Cook, stirring, until spinach is tender, about 3 minutes. Remove pan from heat and set aside.
In a large bowl, whisk the eggs.
Set aside 1 cup of cheese and add the rest to the eggs. Add milk, salt, pepper, boiled spinach and bacon and mix well.
Pour the egg mixture into the prepared dish and sprinkle the remaining cheese evenly on top.
