When Rubio’s came to my Salt Lake neighborhood many years ago, I instantly became a huge fan of fish tacos! I loved Rubio’s fish tacos with a spicy mayonnaise dressing! And back then, I always had fish tacos with Rubio pinto beans!

After all these years, I still love fish tacos, but these low-carb air fryer fish tacos It would suit me better now! I think this fish taco recipe has just the right ingredients to season and add flavor to the fish. Cooking fish using an air fryer allows you to make them literally in minutes. Only carbs!

How to make air fryer fish tacos:

  • 3 fish fillets, about 1 pound of fish

I used frozen mahi-mahi from Costco for this recipe. Use your favorite mild fish.

I’m a big fan of Szeged Fish Rub, but if you don’t have that brand, use the Fish Rub you have.

This recipe uses Szeged paprika, but feel free to use whatever paprika you have on hand. Use non-spicy paprika.

If you want to make this quick dinner even easier, substitute 3 cups of purchased coleslaw mix for the red and green cabbage.
