These easy air fryer empanadas are filled with homemade beef picadillo. It’s crunchy, delicious, and much healthier than fried food.
Beef Empanada Air Fryer Recipe
We love empanadas at my house (who doesn’t?!). I grew up with them and make them at least twice a month, so I always have leftover picadillos in my fridge or freezer. Made with frozen store-bought empanada dough, they’re ready in just a few minutes. It’s also perfect for packing in your child’s lunch box. Madison loves to bring it to school lunches. These air fryer empanadas are easy to make because they use leftover picadillos and frozen empanada discs that you can find in the freezer section of many supermarkets. Once I put it in, I couldn’t go back. These beef he empanadas came out perfect in the air fryer. It also takes half the time in the air fryer than in the oven.You can do it watch me make them here!

how to cook empanadas in air fryer
Start by thawing the frozen empanada dough. If you prefer to make the dough from scratch, use the empanada dough from this recipe. I’ve also had success using Greek yogurt dough, as you can see in this taco empanada recipe.
About the place Place 2 tablespoons of your favorite meat filling in the center of each disc (see ideas below). Fold in half and use a fork to close the edges. Repeat with remaining dough.
Brush empanadas with egg wash.
Fry in single layers, in batches as needed, at 350°F for 8 to 10 minutes, halfway or until golden brown.

No problem with the air fryer! You can also bake these if you don’t have a fryer. Bake in a preheated 400°F oven on a nonstick baking sheet for about 18-20 minutes until golden brown. The dough won’t have the same puffy texture, and it won’t be as crispy, but it will still be delicious.
Can you freeze empanadas
Yes! Quick freeze uncooked empanadas in a sheet pan. Once frozen, it can be transferred to a freezer-safe container and stored for up to 3 months, so you can always make it right away.
Frozen to Air Fry: Place frozen empanadas in air fryer and air fry at 350F for about 12 minutes.
Liberally spray the air fryer basket with olive oil spray to keep it from sticking, or line the basket with air fryer parchment paper.
Place 2 tablespoons of picadillo in the center of each disc. Fold in half and use a fork to close the edges. Repeat with remaining dough.
Whisk the egg whites with water and brush the top of the empanadas.
Fry in a single layer at 350F for 8 minutes, in batches as needed, until half or golden brown. Remove from heat and repeat with remaining empanadas.
