let’s do it!

I am a big fan of the Mediterranean diet. As such, half of the recipes on this list come from the Mediterranean diet. This particular pasta dish is packed with refreshing flavor thanks to lemon, feta cheese and cherry tomatoes. Not a big fan of olives? no problem! This recipe can hold its own without them. , trust the recipe and you’ll have healthy and satisfying pasta!

One-pot Mediterranean Lamb Pasta

Mediterranean diets tend to favor seafood, but may also allow red meat, especially lamb. The flavors here are very different from the shrimp and lemon pasta above. We’re swapping out the crisp citrus flavors for a heartier tomato and veggie base you’ll love. It is included in the , and I highly recommend not using it, as it helps keep this recipe even healthier.

Are you starting to feel a little like pasta? Change things up with this couscous recipe that’s loaded with veggies and uses shrimp again. I love how the couscous is elevated by toasting it slightly before adding the broth and finishing cooking. I’m sure you will too. Make sure the pan is cool after browning the vegetables. Otherwise, do not toast the couscous. I’m going to burn.

tacos tuesday one pot soup

I will never give up on my mission to free tacos starting Tuesday so you can enjoy them every day😂. This is a budget-friendly back-to-school recipe packed with vibrant flavors that just keeps getting better and better each time we come back unless, like chili, you’re cooking this for your family. If so, I assure you there will be nothing left the next day. This recipe is perfect for the cooler fall weather. Use a low-sodium broth to keep this on the healthier side!

Instant Pot Beef and Vegetable Minestrone

This is another great soup option heading into fall, and I think it’s the easiest one-pot recipe on this list! It’s a hearty beef and veggie soup that’s perfect for lunch or dinner. This is a relatively low-fat, high-protein recipe that works well as a post-workout meal. It’s also a great way to fortify. This recipe is ready in less than 15 minutes. If you beat my record, I’d love to hear about it on Instagram @FitMenCook!

It wouldn’t be a good list of one-pot recipes if it didn’t include chilli, right? This is one of my favorite chili recipes because it uses bison (one of my favorite proteins) and bursts with flavor thanks to the shallots and chili peppers. This may seem out of place to Chilean purists, but we love the texture it brings to the table. As always, feel free to experiment with seasonings to really make this chili your own. However, if you’re following macros, follow the rest of the instructions closely.
