Best Dip Recipe: Jalapeno Popper Dip
- 3 jalapeno pepper, 2 sticks as is, 1 sliced in half horizontally
- 1 garlic, not peeled off
- 1½ cup Thick Whole Milk Greek Yogurt*
- 1 tea spoon onion powder
- 1 tea spoon sea salt, plus for sprinkles
- ¼ heaping teaspoon smoked paprika
- ½ cup bread crumbs
- 1½ tea spoon extra virgin olive oil, Plus for drizzle
- ½ cup grated sharp cheddar cheese
- chopped chives, for decoration
- tortilla chips, for serving
Preheat a broiler oven and line a baking sheet with foil. Place two whole jalapenos and one jalapeno half on a baking sheet. Drizzle with olive oil and sprinkle with salt. Wrap the garlic in foil, drizzle with olive oil and place on a baking sheet. Bake for 10 to 15 minutes or until jalapenos are soft and puffy.
Remove from oven and let cool. Once the jalapeños have cooled, use your hands (wearing gloves if necessary) to peel off the loose skin. Cut peppers in half lengthwise and remove seeds and guts. Finely chop the peppers. Remove the garlic from the paper and mash it into a paste using the back of a knife.
In a medium bowl, stir yogurt, onion powder, salt, smoked paprika, garlic and roasted jalapenos.
Toss the bread crumbs with the olive oil in a small bowl. Transfer yogurt mixture to a small skillet or baking dish, top with cheese, and coat with breadcrumbs. Bake for 1 to 5 minutes or until toppings are golden brown. Timings vary by broiler.
Remove from oven. Thinly slice the other half of the jalapeño and sprinkle over the dip. Topped with chives and served with tortilla chips.
